this is my own recipe for peanut butter cookies (with optional chocolate chips)
ingredients:
3/4 cup creamy peanut butter (i use all natural; just peanuts and veg oil)
1/2 cup margarine/butter
1 1/4 cup packed brown sugar
3 tbsp milk
1 tbsp vanilla
1 egg
1 cup all purpose flour
1/3 cup soy flour
3/4 cup whey protein powder (i use choc. protein powder, like the kind you use for shakes)
3/4 tspn salt
3/4 tspn baking soda
optional chocolate chips (i used white choc.)
preheat oven to 350'F
1. combine peanut butter, margarine, brown sugar, milk, and vanilla in a large bowl. blend well. add egg and beat until blended.
2. combine flours, whey, salt, and baking soda in another bowl. add to creamed mixture slowly until blended. mix in chocolate chips.
3. lightly flour baking pans. form dough into small balls (~1.5 inches) place on floured pan and flatten a little with fingers/fork. bake for 6 minutes.
makes about 3 dozen cookies.
i also have a great vegan version of these if anyone is interested.
